Ingredients to make Cheesy Chilada Casserole

1 lb Ground Beef, lean
1/2 ts Salt
1 Med. Bell Pepper, chopped
12 Corn Tortillas
1 Clove Garlic, minced
2 c Shredded Cheese, cheddear or monteray jack
16 oz Pinto Beans, drained
1 Lettuce, shredded
15 oz Tomato Sauce
1 Sour Cream
1 c Picante Sauce, med or hot
1 Fresh Tomato, chopped
1 ts Ground Cumin

Directions to make Cheesy Chilada Casserole

Step 1:Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, picante sauce, cumin and salt. Simmer 15 minutes.
Step 2:Spoon small amount of meat mixture in 13×9 inch baking dish. Top with 6 tortillas. Top with half the remaining meat mixture; sprinkle with cheese, repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350 for 20 minutes
Step 3:Remove foil and top with remaining cheese. Bake uncovered for 5 minutes.
Step 4:Top with lettuce, tomato, sour cream and additional picante sauce

Ingredients to make Make Ahead Meatballs

4 slices of white bread, finely chopped, about 2 cups
2lbs. lean ground beef
4 egg yolks
4 Tbs. chopped fresh parsley
2 Tbs. dried minced onion
1 tsp. salt
1 tsp. mustard powder
1 tsp. ground ginger
1/2 tsp. garlic powder
1/2 tsp. pepper
1 can (10 1/2 oz.) condensed French onion soup
1/4 cup all-purpose flour
1/4 cup sour cream
1 Tbs. Worcestershire sauce

Directions to make Make Ahead Meatballs

Step 1:In a bowl combine bread with 1/2 cup water; let stand until absorbed, 2 minutes. Stir in beef, yolks, 2 Tbs. parsley, onion, salt, mustard, ginger, garlic, and pepper. With wet hands roll heaping tablespoonfuls of meat mixture into balls, about 60. Place in slow cooker.
Step 2:In a bowl stir together soup and flour; pour over meatballs. Cook on high until cooked through, 4 hours; stir. Stir in sour cream and Worcestershire.

Ingredients to make Family Style Beef Stroganoff

1 pound lean ground beef
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon vegetable oil
8 ounces sliced mushrooms
1 large onion, chopped
3 cloves garlic, minced
1/4 cup white wine
1 can (10 3/4 oz.) cream of mushroom soup, undiluted
1/2 cup sour cream
1 Tablespoon Dijon mustard
4 cups cooked egg noodles
chopped fresh parsley, optional
Radish slices and fresh Italian parsley, optional

Directions to make Family Style Beef Stroganoff

Step 1:Preheat oven to 350. Spray 13×9 inch baking dish with nonstick cooking spray. Place beef in large skillet; sprinkle with salt and pepper. Brown beef over medium-high heat until no longer pink, stirring to seperate beef. Drain fat from skillet; set aside beef.
Step 2:Heat oil in same skillet over medium-high heat until hot. Add mushrooms, onion and garlic; cook and stir 2 minutes or until onion is tender. Add wine. Reduce heat to medium-low and simmer 3 minutes. Remove from heat; stir in soup, sour cream and mustard until well combined. Return beef to skillet.
Step 3:Place noodles in prepared dish. Pour beef mixture over noodles; stir until noodles are well coated. Bake uncovered, 30 minutes or until heated through. Sprinkle with chopped parsley, if desiered. Garnish with radish and parsley sprigs, if desired.
