Ingredients to make All Day Chili Soup

2 lb Hamburg
1 ea Onion
1 tb Butter
2 qt Water
2 cn Kidney beans
1 qt Tomatoes; strained
1 c Cream
Chili powder

Directions to make All Day Chili Soup

Step 1:Fry meat and onions until done, meat is no longer pink, drain. Add other ingredients, salt and pepper and let simmer – the longer the better.

Browned ground beef, with a dash of cumin, salsa, and tried and true pinto beans are layered with amazing totillas, and baked to blend. Served with traditional Mexican taco ingredients added on top, or on the side.

Ingredients to make Cheesy Chilada Casserole

1 lb Ground Beef, lean
1/2 ts Salt
1 Med. Bell Pepper, chopped
12 Corn Tortillas
1 Clove Garlic, minced
2 c Shredded Cheese, cheddear or monteray jack
16 oz Pinto Beans, drained
1 Lettuce, shredded
15 oz Tomato Sauce
1 Sour Cream
1 c Picante Sauce, med or hot
1 Fresh Tomato, chopped
1 ts Ground Cumin

Directions to make Cheesy Chilada Casserole

Step 1:Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, picante sauce, cumin and salt. Simmer 15 minutes.
Step 2:Spoon small amount of meat mixture in 13×9 inch baking dish. Top with 6 tortillas. Top with half the remaining meat mixture; sprinkle with cheese, repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350 for 20 minutes
Step 3:Remove foil and top with remaining cheese. Bake uncovered for 5 minutes.
Step 4:Top with lettuce, tomato, sour cream and additional picante sauce

Saucy Meatball Stuffed Pasta

Ingredients to make Saucy Meatball Stuffed Pasta

MEAT BALLS:
1 1/2 lb ground beef chuck
1/2 lb ground pork
1/2 c chopped onion
1/4 c minced parsey
1/4 c grated Parmesan cheese
2 tb bread crumbs
2 tb oil
2 eggs
1 Clove garlic; minced
2 ts salt
1/4 ts pepper
olive oil
TOMATO SAUCE:
1/4 c oil
1/4 c chopped onion
1/4 c chopped green pepper
1 Clove garlic; minced
1 cn (6-oz)mushrooms
4 cn (6-oz)tomato paste
1 cn (#2-1/2)Italian plum tomatoes
1 ts sugar
2 ts salt
1/4 ts pepper

MAKING THE CASSEROLE:
1 lb tufoli (large tube macaroni)
meat balls from step #1
1 1/2 pk frozen chopped spinach
1 ts salt
1/2 c Parmesan cheese
1 egg

Directions to make Saucy Meatball Stuffed Pasta

Step 1:Mix all ingredients for meat balls together thoroughly, except the last, olive oil. Form into medium sized balls: brown in oil. Set aside and cook in tomato sauce later.
Step 2:To make tomato sauce: Heat the oil: add onion, green pepper, garlic, mushrooms (drained and halved) and sautee until golden. Stir in tomato paste; cook for 4 minutes. Press plum tomatoes through a strainer; add an equal amount of water. Combine with tomato paste mixture. Add sugar, salt and pepper. Bring to a boil; add meatballs and cook over low heat 1-1/2 hours or until sauce thickens slightly. Remove meatballs and put aside.
Step 3:Cook tufoli in 6 quarts boiling, salted water for 12 to 15 minutes or until almost tender.
Step 4:Mash meat balls in a bowl. Add spinach (drained and finely chopped), salt, 2 tablespoons cheese and the egg, mixing well. Stuff this mixture into cooked tufoli. Cover bottom of a large casserole with half of sauce and arrange alternate layers of stufted tufoli and sauce, sprinkling each layer with cheese; finish with sauce. Cover dish and bake in a moderate oven (350 degrees) for 30 minutes.
Step 5:Serve with extra sauce and cheese.
